8 slices - bread
1 cup - sugar
1 liter - milk
3 tbsp - chopped almonds, pistachios and cashew nuts
5 tbsps - ghee
3 strands - saffron, soaked in a little water
Method
- Cut each slice of bread into 2 breadth wise, so that there are 16 pieces in all.
- Heat ghee and fry bread till slightly crisp and golden on both sides. Arrange in a serving dish.
- Dissolve the sugar in approximately � cup water.
- Boil till sugar is dissolved and syrup is thickish.
- Pour half the syrup over the bread.
- Boil milk till less than half the quantity is left, stirring all the time.
- Pour in remaining sugar syrup.
- Add strands of saffron previously soaked in a little water.
- Cook till about 1 � - 2 cups of rabri are ready.
- Pour rabri over the bread soaked in syrup.
- Garnish with nuts and serve hot or cold.
